When I think about French food that I love, I don't think about classic French food.
Sure, I love me some escargot or coquilles saint jacques but the simple day to day French food is what I really love.
I remember waking up in the morning and eating a small bowl of granola with chocolate chips (excellent recipe here) or just enjoying a bowl of hot chocolate with a piece of bread. The school cafeteria introduced me to fresh radishes and simple boiled shrimp served with bread and butter. Pate de campange was something I hesitated trying at first, but soon became the love of my life.
And of course-there were sandwiches. I absolutely adore sandwiches and the ones I ate in France were some of the best. Good bread, a boiled egg, some ham and maybe a ripe tomato or two...ah heaven.
I had a host mom who was the queen of simplicity and taught me that it is all about the ingredients. She'd make an omelette with just fresh eggs and butter that would knock your socks off. She served fresh pasta with sea salt, olive oil and fresh basil that would make your heart sing. My absolute favorite dish she made was basmati rice, fresh chopped tomatoes, parsley and corn mixed to form a salad. It's unbelievably good.
